Springtime Salad with Honey Chipotle Dressing

To say I love salad is an understatement. It’s nourishing and refreshing, and is excellent energy food.

This fun salad is a favorite around here, and is an excellent example of harmonizing flavors

According to Chinese medicine, there are 5 main food flavors: Pungent/Spicy, Sour, Sweet, Salty & Bitter. It is said that a balanced combination of each of these helps promote optimal health in body and mind.

The salad ingredients are adaptable here depending on what’s local and looking good to you. These are the ingredients I’ve been using lately. It’s a simple list, and the combo of colors, tastes and textures is lovely.

  • 1 head chopped red leaf lettuce
  • Handful (or more if you like these nutritional powerhouses) chopped dandelion greens
  • 1 grated yellow beet (medium sized)
  • 1 generous handful radish sprouts
  • 1/2 avocado, sliced

 

And for the dressing:

1/2 cup apple cider vinegar

1/2 cup olive oil

1/4 cup honey (or agave)

1 tbsp adobo sauce (use less for less spicy)

1 tsp garlic powder

salt to taste (i like pink Himalayan salt best)

Blend all ingredients in a blender until emulsified.

 

Toss salad with dressing to taste and enjoy!
